I do walls and ceilings the same color lots of times and honestly there is no reason to choose a color for the walls that seems to be the white of a ceiling . I have all pale gray walls and ceilings and I love it. BTW no normal ceiling color it can be whatever you like.

If you select the same color for walls and ceiling, the ceiling may appear darker than the walls.

FLAT paint is typically used for the ceiling to hide any imperfections and EGGSHELL for the walls for durability & cleanability.

Do you think Agreeable Gray (SW) would be light enough to wrap around from walls into the ceiling as well?

there is no crown moulding at this point in time which may make a difference. :(

You are correct except we are using matte (flat) on the walls.

I am in the same boat… what did you decide? And for trim?
