I certainly would use them.

As long as they are properly sealed, they should be safe to eat. However, I find that after a couple of years they lose quality, becoming soft and less flavorful.

If they are still good enough quality to enjoy, I'd eat them, but I'm picky about texture, so if they are very soft, they'd become chicken food here, and thus be recycled into eggs, LOL.

I agree with Annie. The quality on most pickled things goes down quickly after about 1.5 - 2 years. I no longer have a chicken flock to feed things to so I toss most expired or inedible foods into a storm water runoff ditch on my property where the wild critters will find it. I tossed a chicken carcass in there this morning and I see the crows have already found it.
