I would consider the BlueStar if you like to cook with a wok. The BlueStar has a couple of features that some find useful.

It does not have a burner cap. A burner cap makes the flames flare out as you turn the heat up on high. It also has a star shape with burner ports along the side so that as you turn it up, the flame stays more in the same foot print and more to the center. This is good for cooking on a wok because it keeps more of those BTUs to the center.

The two uncapped burners also have better dispersal of heat which is important if you use cast iron, steel or another type of pan that doesn’t have good transmission of heat. If you have pans that conduct heat well, like aluminum, copper or some pans layered with these metals, it doesn’t matter as much. You have to size the pans to the burner to take advantage of this. If you have a large skillet, keeping heat in the middle might not be a good thing.

You have to be a little bit careful with the way the term “open burner” is used when talking a burners. The term really refers to the burner tray open vs sealed which is about cleaning. The cap has more to do with performance. BlueStar is so much more than the burner tray. This is Viking’s “open burner”. As you can see it has a cap so performs like other capped burners.

This is another star uncapped burner(American Performer) that has performance like the BS but is a “semi open” burner because the tray is tight to the burner, almost like sealed but lifts off for cleaning.

Kitchenaid also has this burner but not on the rangetop that I can see. .
