Warm is more subtle but if you want the tile shapes to be the focus then oyster. I think the subtleness of warm would be nice for both.

Is cool white too light or should I stick with bleached wood ? I keep going lighter. Sort of nervous about the dark grout lines.

Bleached word is nice and gives more definition to the white tile and ties them into your countertop. If you want more of a pure white back splash then cool white would be the choice and tie more into your cabinets which looks like from one of the pictures you are going with white for cabinets.

Either will work just depending on how light and bright you want the kitchen or if you want a little more warmth.

I do not like the cool white. Stick with Bleached or Warm

Yes, I used bleached wood on the white subway tiles and it turned out gorgeous. Let me dig up some photos
