You misunderstood: the offset drain position and the depth of the sink are two separate issues with respect to a garbage disposal.

(1) an issue with an offset drain in the corner may occur if you have a very large garbage disposal - for example, the 1 hp Waste King batch feed disposal which is the widest residential disposal I am aware of. The issue is that the width of the disposal could make it difficult to fit into a corner if the sink drain is very close to the corner. If instead your disposal is a 3/4 hp size (I would not go smaller) and a continuous-feed style which tends to be narrower than the batch feed disposals, the corner drain will not be a problem for your disposal.

(2) the depth of the sink can be a problem if your outlet drain pipe in the wall under the sink is higher or at the same height as the installed disposal's outlet. This has nothing whatsoever to do with whether your sink has an offset drain or not. Regardless whether your sink drain is offset or not, your outlet drain pipe must be lower than where the disposal outlet drain is in order for gravity to work so that the water exits out the drain.

I would avoid all granite composite sinks in the white or cream colors. It has been much reported on this forum that those colors are not carefree like the darker granite composite colors, and will stain easily.

Why doesn't the BlancoDiamond Super Single have what you want? It fits in a 36" cabinet which you said you can do, has an offset drain in the corner, but the drain is not so far in the corner as to cause the disposal width issue, Blanco is a well-known brand and holds many patents on its Silgranit material, and Silgranit comes in a myriad of colors. In the gray family, I particularly like the Blanco Silgranit Cinder color, but Silgranit comes in a couple other gray shades. You can just buy an over-the-sink drying rack on Amazon for little money, and those tiny cutting boards that fit inside the sink of that size aren't very useful.

The Blanco sink doesn't have the cutting board that sits inside the sink as the Kraus does. From the photos, it looks like the Kraus is closer to the edge. I sent for samples of the Blanco but they did not send one of the gray. I got a sample of the Truffle but it looks too dark.

A 33" sink undermounts into a 33" cabinet if the sink is strapped and the manufacturer-provided clips are trashed.

Any undermount sink can be a "workstation" by simply enlarging the positive reveal.

One thing I am worried about is the drain placement for the garbage disposal. I was going to get 30" sinks but they are the same price as the 33" sinks. It would probably be a waste of money to get 30" sinks and put them in 36" cabinets.

Finding my way to this thread because I am looking at the Kraus composite workstation sink described in the original post. Any comments on this sink?
I know there is a lot of love for the Elkay composite sink, but it’s out of my price range. I’ve narrowed it down to either Kraus or Ruvati composite workstation sink.

I should add that I’m happy with the Ruvati workstation sink. I use the drying rack feature often, but rarely use the cutting board.
It’s true that the rack that rests on the floor of the sink can catch gunk as you rinse, so I’m more careful about rinsing larger waste directly into the hole for the disposal. Once a week I fill the sink with soapy water a few inches high (enough to cover the bottom rack), soak overnight, and scrub in the morning…it’s clean enough for me.
