Paneling and insulation options for unheated cabin

My parents purchased a cabin and chunk of land in Northern PA. Back in the woods there is a "summer cabin" that they have little interest in, and gave me the go ahead to make my own. One of the first thing I'm looking at doing is ripping out the existing paneling and insulation (its moldy). Looking for some suggestions on what to use to replace. The cabin is unheated and there is no electric. There is a few lights and outlets that could be powered by a generator.
While I'm here, any other tips or resource recommendations for this overall project would be welcomed. The cabin overall appears to be in decent shape. Certainly good enough for warm weather use. Ideally I'd like to get it to a level where it can be used for at least the majority of the year.
