We will have same scenario. Installing 30” stove and have 8’ ceilings so watching your thread. We have not yet selected a vent as we have some complications regarding makeup air in our older log home, but we have been reading spec sheets and installation manuals and all that we have looked at so far will work with 8’ ceilings. Also from our research so far, capture is very important along with the CFM’s. Then with all of that is adequate makeup air! With all of these higher BTU stoves now being installed in residential kitchens the ventillation is super important.
