i would do a simple laminate countertop (Formica).

Laminate counter. If near a Menard's, you can order custom size counter to fit the peninsula w/ overhang.

Or make them yourself. Gluing laminate sounds scary but it really is quite easy. Sheet laminate is available to order from Lowe's, Home Depot... and very reasonably priced.

Basic tools--circular saw & router are all that is needed. You can even use a rolling pin instead of a laminate roller.

your dad will probably not be too fussy. I would go with entry price point corian or solid surface. if he is elderly that will be nice resale value if his situation changes and needs to move.....an integrated sink would look nice and probably hold up with the use a gent will put on the kitchen overall. his priority is probably exercise / mobility/ eating light and healthy ...get the point??? you didnt install drawers. get aftermarket chrome pullouts for the base areas of the lower cabinets. the guy needs convenience. i'd use a curve to the overhang as it gobbles less space ..he may or may not like sitting at it but you achieve something as opposed to no overhang . maneuvering around without sharp corners is a consideration....

You also want to add a door to the back side of corner cabinets where possible so you can access the corner.
