If the lights flicker when the AC kicks in, you have an excess current draw on that circuit. This could be a fire hazard. You need a competent licensed electrician to figure out what's going on. Chance are either your main power drop is undersized for all the remodeled circuits or you just have too much on that one circuit powering the AC..

Did the contractor apply for permits and if so was a final electrical inspection performed?

Do the lights flicker or dim?

Are the lights LED, florescent or incandescent ? Is light wiring copper or aluminum ? What gauge is wire? Did you add ground fault outlets during remodel? What brand panel box do you have? What make and model ac do you have? I didn't chime in asking questions earlier because I thought you were asking if contractor should be called back on the problem. Appears the majority thinks you are wading in on it as a diy ,I don't want to be left out of the party ,hence the need for some tech information before diagnosing the problem.

I’m thinking of asking him to document in writing what they did to ensure the electrical wiring was done properly in case we have any future issues or insurance issues if the electrical does go bad

The fact that the lights flicker every time the AC is a big clue it is related to the AC.

Documenting things does not ensure anything was done correctly and compliant to code. The document will be much help if there is a fire and the insurance company determines the electrical wiring was not done correctly and denies the claim.

If you are worried about safety for your family then you need to hire a licensed electrician to make the necessary repairs. You can then fight with the general contractor who will pay the electrician's bill.

Well lol you better get someone that does have an idea before bad go's to worse. You must not have much confidence in your contractor if you think interweb buds can fix something he can't fix nor pay someone to fix.
