Taking advantage of borage

Thanks to floral_uk some years go I learned to appreciate borage as a beneficial weed. Now I have a lot more, most of it right in the vegetable garden. What is the best way to take advantage of it?

I grew borage when I first got bees and it spread all over my vegetable garden. It's easy enough to be rid of and that's what I did. Other than a bee offering, I only used the borage flowers, which are lovely, and not strong like nasturtiums, on deviled eggs or on a salad. When I had chickens who laid eggs with yolks the color of a sunset, there was nothing prettier to bring to a party than a deviled egg decorated with a tiny, johnny-jump-up blossom and a feather of dill.

You are right Floral!! My apologies But dont they look someehat similar and also both add fertility? I dont know how I confused them..

They're in the same family, Boraginaceae. Afaik, other being a compost ingredient, Borage doesn't do much for fertility since it is an annual and doesn't have Comfrey's deep roots.

It is great for the bees, but the leaves make a nice tea. Sort of cucmber-y. I've done hot tea, and also "sun tea" that I put in the fridge when it's done - refreshing on a hot day. Flowers are good for garnish, as @annpat has mentioned.

I grew borage for the first time this year. I was very surprised by how big it got! I loved sitting by it and watching all the different bees. By the end of summer it had already reseeded so I'm betting I'll have more in the spring and I'll let 1 or 2 grow.
