Please help me with paint finishes--need to decide quickly!

I am painting the walls of this room 75% formula of BM Blue Heather #1620 in eggshell. We are getting built in cabinets installed which are White Linen color. I want to paint the entire ceiling, including top of the tray, white. I would color match the white to the color of the cabinets. What paint finishes would I use? Semi gloss on all the trim, including all the molding? Or satin? What paint finish should I use on the lower tray and the top tray?
