Fermentation of tomato seeds before saving them is considered essential for removing the gel that surrounds them that inhibits germination. But is there any value of doing that with pepper seeds? I've never done it, but I'm suddenly wondering if I should be doing it, and maybe my germination rate would improve. Now, my understanding is that such gel is essential for tomato seeds because they are coming out of a very wet fruit, which ordinarily would encourage germination. But peppers seeds do not come out of a wet fruit. I've seen many seed saving instructions for peppers that don't mention fermentation, but a few do.
