It's a lovely room but I hate the look of the bifold doors. Can those be replaced?

I would remove the wall shelves and replace with colorful art.

Replace the coffee table with something in a darker wood.

Hang a chandelier over the dining table.

Get some small tables with lamps.

It’s a lovely space with a gorgeous valuted ceiling. I would keep it simple and calming with white walls and natural jute.
