Low carb can be nuts and fruit. Ask for some nice fruit. Or tasty nuts.

I say you tell her the truth, that your husband's health requires him to change his eating habits and so you are avoiding carbs and sweets. I really don't see how someone could be offended by health issues. I regularly cook around a recent vegetarian, two diabetics, one daughter with celiac disease, one lactose intolerant, one with diverticulitis and one with Crohn's, and one stepson who "does" modified Keto. Somehow no one starves and it just isn't a big deal here for anyone except the vegetarian who is something of a drama queen anyway and has to make sure everyone knows that she is not going to eat that tenderloin.
