That porcelain mountain thing does not fit the vibe of your kitchen. At all. Maybe if it were in a different material, but even then it would look too contrived IMO.

I saw an inspiration of a similar kitchen on FB and it looked neat but I felt the same way, it overpowers the kitchen.

What color countertops would you pick for the space?

The thickness of the piece will tell you what will work. Unless that is super thick 3Cm+, its going to look weird inset in stone.

I’d go with something rustic and utilitarian, like soapstone, a black granite, or maybe copper countertops

Nothing highly polished or too fussy. I'd suggest honed or leathered Steel Grey or Virginia Mist (Jet Mist) granite, or soapstone. But do educate yourself on soapstone before going down that path, if you like the look of it. You could also do a simple matte white Corian-type top.

Yep, my first thought was soapstone, Virginia mist granite, or white Corian. When there are such beautiful views out the window, I don't think you need to distract the eye with fancy backsplash. Simple is key in this room.
