Witham Butternut squash question........

Hi all. I've grown this squash for many years over my kids' old swing set (after they grew up and moved out.....not while they were still using it.). This year has been really unusual....with the extreme heat and lack of rain. Although I do have a hydrant close and watered it pretty routinely. I should have dug up where they've been planted every year and put new soil (compost) down, but I did that a little. They took forever to grow. I do have about 3-4 of them. My question is: They never went through the usual way of ripening. By that I mean they never developed the green lines through them and never got a darker tan color. Most of the plant is dead now. The couple of squash are a reasonable size and are pretty light in color. Should I expect them to not be ripe at all....or just be fairly un-sweet? Thanks!
