Complete home remodel following house fire. HELP!

We are remodeling after a house fire and have pretty much a blank slate other than the footprint remaining the same(mostly). I'm not very good at design, but I do know my stye leans traditional/transition, and we are going for a calming serene/NOD to coastal. At this point I have the most decision fatigue ever and we are at the final month before moving back home. I'm having a hard time making everything cohesive and picking paint colors for cabinets etc without actually seeing them in the house.
We have this corner fireplace in our living room that is a thorn in my side. Our ceilings are 8 ft-would you tile all the way to the ceiling on the wall where the fireplace is, or just up until the mantle? Also torn between a solid wood edge mantle or a craftsman style surround. Fireplace surround tile will be Jerica Ceniza Porcelain Wall and Floor Tile - 3 x 12 in laid in brick pattern., floors will be Cortex Cairo Oak LVP, and kitchen is already designed. Also struggling with the downstairs powder bath 😭😭 too many decisions and we can't afford. A designer. Inspo and material photos attached. Help!
