My daughter had cabinets like these. She used Rustoleum product, link below. She had little DIY experience and they look great! She stained them darker.

HI -- You could have new doors or not and have them pro-painted . The yellowing is the finish on the oak ,not the wood it self . But if you are done with them then it could be time for a change. They look very eighties now - oak had it's day then . Have the jobs priced out and then that might help you decide. If there are issues with the function or layout , then maybe it is time for an all new kitchen to fix those.

Yes not a fan of the arch. Function of kitchen works very well. Maybe a change of doors. If I change the doors can I have it all stained darker?? Would like to make them darked. More tan.

Look into cabinet refacing, and yes you can change the stain colour. If you look at the before/after pic ann posted some doors were changed because they are no longer arched.
