I know this wasn't an option for flooring, but you may want to lighten it up. Attached Is a photo of my thought (I'm doing the same thing with a light strand bamboo). Then the countertop and backsplash can be light and bright. Try a quartz countertop or marble if it's in the budget. For the backsplash maybe go for a skinny, long tile in a color picked from your countertop.

Hi. I just went through the process of selecting flooring when we purchased our home 18 months ago. I too was sure I wanted bamboo. The more research I did the more I found out that bamboo floors are manufactured with chemicals such as fromaldehyde and have serious off gassing. Since we have young children I decided to go with a wood floor that supposedly did not have off gassing. I am sure there are green bamboo flooring companies that don't have this issue but the ones I found were out of my price range for the amount of flooring I needed for my main floor alone. It's really hard to give suggestions -not sure what direction your tastes go, traditional, contemporary etc.
I do like that this is not typical granite look though.
