I'm doing a small bathroom with bright white wavy subway tile (white grout) halfway up the wall, all the way to the ceiling in the shower. Rest of room will be painted BM Simply White (neutral white, leaning toward warm).

Floor will be 2x2 mosaic glass, kind of a greenish gray.

I went to the local granite/marble yard to choose a remnant for the windowsill, shower saddle, bathroom door saddle, and two corner shower ledges.

Torn between a piece of Calacatta Gold (but one with very few pale, subtle streaks, not dramatic, reads very white) or Carerra (very busy with gray veins). And do you advise honed or unhoned? Or does it not matter?
