I had a client that had a similar dilemma. They did use a high end microwave over their Wolf range. You will of course need to research the distance required.

I would consult the Wolfe manual since they will have a recommended and/or required CFM to adequately vent your new professional range. Ideally you want the hood to be deeper than a microwave hood to capture air from both the front burners and the back burners.

Well, if you hung the bottom of a microwave at the recommended height for a range hood over a standard electric range, and stayed above the 30" minimum clearance for combustibles over a standard electric range, then it would also be pretty useless over a standard electric range. That is not what the above diagram is referencing. By definition, a minimum height above something would only be one number (not 30 to 36). That is a suggested height for an actual "hood", not a microwave.

GE states that;

Over the Range Microwaves and Advantiums:

Over the range microwaves require a minimum 66" mounting height from floor to top of the micro. The 66" from the floor dimension will allow approximately 13"-16" between the cooktop and the bottom front of the microwave.
All current over the range microwaves can be installed over gas cooking products up to and including 5 burner stoves. As long as the 66" minimum from the floor to the top of the microwave is followed there will be no performance or warranty problem. This includes Advantium ovens and convection microwaves.

Note: Over-the-range microwaves and Advantiums should not be installed above any range or cooktop that has a combined BTU rating over 60,000 BTUS, not including the oven/broiler BTUs.

The International Residential Code states that;

SECTION M1901 RANGES AND OVENS

M1901.1 Clearances.
Freestanding or built-in ranges shall have a vertical clearance above the cooking top of not less than 30 inches (762 mm) to unprotected combustible material. Reduced clearances are permitted in accordance with the listing and labeling of the range hoods or appliances. The installation of a listed and labeled cooking appliance or microwave oven over a listed and labeled cooking appliance shall be in accordance with Section M1504.1. The clearances for a domestic open-top broiler unit shall be in accordance with Section M1505.1.

M1504.1 Installation of a microwave oven over a cooking appliance.
The installation of a listed and labeled cooking appliance or microwave oven over a listed and labeled cooking appliance shall conform to the terms of the upper appliance’s listing and label and the manufacturer’s installation instructions. The microwave oven shall conform to UL 923.

Because they are also convection ovens, and as such, are designed to reach a temperature of 450°F deliberately.
Of course, neither will get rid of any heat from the stove any more than a recirculating hood would. Unless, the hood happened to be hiding an air conditioner inside of it.

I am also having exactly the same question. We also want to pick the Wolf range in a small NYC apartment and find it difficult to choose the right over the range Microwave.

I am also looking at the Wolfe gas cooktop with a built in Wolfe oven below. Due to limited space and not being able to vent outside on the wall the appliances are going I was thinking of utilizing a microwave with ventilation. If Wolfe offered one, I would choose that so all the appliance match but they don't. What did you go with?

We had a microwave over the range that had no outside air for 20 years . When I used all burners the fan would kick on for a very long time and it was extremely loud and annoying . You also have a feeling of cooking in a cave because of the clearance.
