It's not necessary to put tiles behind the fridge, do you have any photos of what the current kitchen is like now so we can provide better input?

Usually the tiles run from the counter to the bottom of the upper cabinets, and in the case of the range or stovetop, from the counters/back of the range up to the range hood or above-range microwave. Occasionally there are trickier decisions about corners, edge pieces, or range hoods that have open walls behind them. So do post photos if there are any tricky parts to your kitchen layout.

There is not a lot of wall here, so I am wondering if you actually need the tile at all. If you are set on tile, no pun intended, then consider going to the ceiling and wrapping the window (if you can get a piece of the countertop material and have a sill made that would be nice). As for the area behind the fridge that is a tough call. Normally i would recommend starting at the height of the backsplash and going up to the ceiling in hopes that at some point in the future, the fridge would be relocated somewhere else in the room and a wall and base cabinet could be installed here, however, there currently is no counter or backsplash and retrofitting these items would be challenging. If you do go behind the fridge, there will need to be a finished edge at the corner. In order for it to look purposeful, it would be best to finish the edge all the way own to the floor which adds cost to you project. Lastly, recognize that if you put tile on the walls you will find it more difficult to hang art such as what you currently have over the fridge.
