How do you use your griddle?

I used to have a griddle that fits over double burners. I rarely used it. So I stuck it in the Goodwill pile. People here on GW rave about griddles on their range tops.

We eat American pancakes about 2 times per year. We make German pancakes every weekend (very similar to crepes and has to be made in a pan) because DH's family is German and that is all he ate growing up AND my kids prefer them over American pancakes. (in our household pancakes mean the German kind and we call the usual pancakes the American pancakes.)

At my house, hamburgers/sausages/steaks/chicken/vegetables or what not get grilled on the grill year round right outside of our kitchen. Yes, our weather is temperate and we do not have to deal with snow. Bacon and breakfast sausages get cooked in the oven.

Quesadillas, grilled sandwichs, and French toasts come to my mind as something that can be cooked on a griddle. I would prefer a panini maker over a griddle if I was grilling a sandwich. I have neither a griddle or panini maker. I am not really sure I know what else I would use the griddle for... It's just my lack of imagination how I would use a griddle.

For those of you with a griddle, how often would you use the griddle? What do you use it for?

Just curious because it is so touted here.....

I'm curious about this too. We probably wouldn't have a range griddle if we didn't happen to have one (how's that for clarity of writing...perhaps that should just say "but it came with the house!") I really don't use it very often---maybe half a dozen times a year. I'd like to use it more, although one very big factor is that our griddle has a giant cover that has to be removed, and there are no adjacent counters so it must be set in the sink, on the trash can, or on the floor. Maybe when we have counters nearby, the griddle and I will get to know one another...

Here's what I like it for:
    - Grilled cheese or any other grilled sandwiches if I'm making more than one
    - Keeping things like pancakes or fritters warm while others are being cooked
    - "Grilling" sliced vegetables indoors (because I like grilled veggies in the summertime, even though I now live somewhere where there is no such thing as summertime, and thus grilling outdoors is less appealing)
    - Warming plates (b/c our griddle has a pilot and is a bit warm when off--I don't actually turn it on for this, I swear!)

I *don't* like it for pancakes because the batter always seems to get under it, somehow, which is a mess to clean. Modern griddles might have solved this problem by not having ill-placed holes in them, though.

I should probably use it for things like hash browns or sauteed veggies, but don't.

Would love other ideas of good things to cook on griddles, though!

You can cook anything on a griddle, it's just a big pan. Meat, fruit, vegetables, sandwiches, hash browns, fajitas, kabobs, eggs and bacon (although I am not a huge fan of eggs on the griddle), burgers, ...

It is good for cooking a lot of stuff at once instead of in batches.

I think it's just a matter of adjusting your brain to it. It isn't just for breakfast, as they say. :-)

we use our griddle mainly for breakfast. it's great to have a really large, flat surface for...

    - pancakes
    - eggs
    - bacon
    - french toast
    - hash browns

for dinnertime, i've used it for korean beef bulgogi and steaks when the weather isn't good for firing up the grill.

    oh man, i'm getting hungry...
