Advice on over the kitchen sink lighting

My kitchen ceilings are about 20 feet tall. I need advice on lighting over my sink. Im thinking about replacing the current fixture with 2-3 down light sconces and replacing the blinds with roman shades. Any advice is MUCH appreciated! I've been debating this for almost a year!!!! HELP!!!!
