I am very happy with it. I like a light kitchen. Oak cabinets have movement because of the grain. So does your countertop. It is best for the backsplash to be simple so as not to compete with the other surfaces which would create a feeling of business.

First, the most important thing you can do is add under cabinet lighting as it is much easier to do before you install the backsplash. You will want to illuminate the results and also improve countertop task lighting. Second, you should feel free to choose subway tile in any color that exactly matches ANY of the colors in your granite countertop. Be sure to lay the sample tile on top of you granite to see that it is the right color. Don't be afraid to use cream if you want a light, bright look. Optionally, to add interest, you can add a narrow line of accent tiles in a 2nd color from your granite, or match the color of your cabinets. This would go right above or below your outlet covers. Keep in mind that you might need new outlet covers that will blend in with the new backsplash tile. For cabinet hardware, it looks like brushed nickel would work best since you have stainless appliances and sink. Your sink faucet and any dropped lights you are planning should match that too.

Yes, a cream subway tile would be a good choice. As jhmarie mentioned, keep it simple due to the grain in the cabinets and granite pattern.
