Canning Sweet Potatoes

When canning sweet potatoes, do you have to boil then peel, or can you peel then boil? Some of my SP are pretty big, so I thought it would be easier to peel, cut into chunks, cook part way, then can.

Recommend you boil first and then peel, then chill them to peeling temp. Not only does it make them much easier to peel but keeping them whole through the first boiling (rather than in pieces) also keeps them more firm in the end, lets them hold up to the pressure canning better, and they keep better color too. Now when I have some that are football size I will cut them into quarters first but leave the peel in place to boil.

They just have a tendency IME to turn mushy and fade color if peeled first and then boiled or if boiled in smaller chunks.

Just as the canning instructions say, "boil or steam until partially soft (15 to 20 minutes)".
