I'd put a single fixture centered perfectly to the room. I have so many off-center light fixtures in my also very old house and it drives me insane.

8'5" seems a bit short for a chandelie/pendant fixture that hangs down more than a bit.

Will it matter that the fixture won’t be centered over the bed?

Nope. What if you decide to rearrange the furniture in the future? Or get a different-sized bed? Now your formerly bed-centered light fixture is poking out of a random spot on your ceiling. Also when you're in bed using the nightstand lamps, you won't be using the overhead light.

It's always a good idea to center/position permanent fixtures (like ceiling lighting) relative to fixed reference points, like the dimensions of the room itself, rather than something transient or impermanent, like placement of furniture.
