You could tile all of it to the ceiling. It would be the most uniform look. But I would probably tile - or use counter material - up to the bottom ledge of the windows. Where you have upper cabinets, I’d tile up to the uppers. And where you have your stove, I’d tile up to the hood.

When you have multiple levels of tile, things can look a little disjointed. The tile you use will make all of the difference.

You could tile the entire wall. Or tile completely to the ceiling behind the stove and to just above the upper cabinets.

Tile up to the hood over the range and up to the cabinetry bottom measurement on the rest of the walls except where there are windows...up to the window trim there. Use blue tape to mark the position of the backsplash areas. Be sure that you use bullnose trim on all exposed edges. You can tile whole walls but that gets expensive.

Are you doing anything to the side of the cabinet that abuts the range hood? Looks as thought there might be a potential for damage in that spot.
