I'd let it grow as is this first season in the ground to see how it develops, then next year decide how you want to shape. My Japanese persimmon tree rarely needed pruning other than for a couple of lower branches that rested upon the ground when heavy with fruit. It's 15 years old and is stable at 12' high and 12' wide.
