Snow pea plant question

I bought a pack of Mckenzie seeds and planted snow peas for the first time this year, and I've been harvesting them as they grow to about 6 or 7 mm. I ate them yesterday for the first time and it was super woody and stringy. The color is a duller green than store bought ones and way tougher, Is there something I'm doing wrong? The weather has been hot and sunny, as we're having our second heat wave here. I do keep them watered every evening. the leaves at the bottom are yellowing, they have climbed to about 5 ft now on the trellis.

Also, why do some pods have huge peas inside and some have tiny little ones? And it does not vary with size of the pod; there's just two variations. Should I be saving the puffy ones for seeds?
