That is one awesome looking piece of granite. Yes have them template it so you can see what it is going to look like but by all means don't pass it up. Love it, love it, love it.

When you view this slab in its forever home, the perspective is so much different then looking at it headlong like this. Once in place you will sit at it (or work at it) looking straight down on it from about 30 inches away. (One installed the glossy glare of the material will "soften" the directional effect of the flow when viewed from a distant view. ) your first impression from a distance will be based on the overall color of it and how it relates to the rest of the room-like the backsplash and the cabinet color. Then you will get closer and gaze upon it (30" remember) and you will analyze the components of what makes it interesting (quartz/sand/marble.) If you like the color from a distance and the flow from 30" --it's pretty certain your going to love it for a long time. Since the size takes up the whole slab, layout is useless unless you have sink/stove placements to consider. Btw, What is the perimeter countertop material?
