This apple tree had never been pruned before and was quite a mess! I came in and gave it a new structure to mature into. Specifically with fruit trees the Japanese technique is to create more space for the tree to bear fruit, but also to make harvesting an ease - both quite the efficient and aesthetically pleasing technique!
