We generally recommend against installing polished marble in the kitchen. Marble will etch if you spill any acids on it (lemon juice, tomatoes, vinegar, wine). This will essentially remove the polish. Sealers help protect your counter from staining, but can't protect against etching. If you have a honed counter top already, the etching will be less obvious and easier to maintain.
