Maybe they put a layer of something over the wood? Type X drywall or something along those lines. Or maybe they just did renovations afterwards without a permit.

Regardless of it being or not being against fire code, which could vary by state or country, it doesn't seem the least bit practical from the cooking standpoint. Where are you going to put a steamy dripping lid or rest a plate or platter while transferring cooked items when you've got multiple pots and pans on the range top? In my opinion there should be at least 12" of counter on EACH side to allow for these instances. Additionally, I wouldn't have put a cabinet between the dishwasher and the sink. Think of the water dripping on the wood flooring from your rinsed dish while loading the dishwasher! Also, a design tip: NEVER put a refrigerator directly against a side wall. It makes it a real pain to remove a shelf or drawer to clean up a spill and limits accessibility. At least they got this right in this kitchen!
