Yes, Schluter finishing and edge-protection profiles are a great option. Especially, when coordinating bullnose is unavailable.

You can use Starquartz or Dimension grout with glass in a backsplash - at least you can use it with the glass we manufacture here in California and I would check with the glass manufacturer to make sure you can use it (as it may scratch their glass because the grout has tiny, tiny pieces of glass in it to give the grout the reflective quality). The tiles in your photo may be from AKDO (see image) - it's a beautiful glass tile which is a mix of both matte and glossy tile - I think it's the Parchment color.
Though it's more expensive than conventional sanded/non-sanded grout, we've used the Starquartz and Dimension grout (each from different companies) with equal success. A highlight with these new urethane grouts is that they're non-stainable and anti-microbial. And both the Starquartz and Dimension grouts are part of a grout line which includes grout without the glass bits in it. For example, Bostik's urethane grout is called TruColor Grout...it too, is non-stainable and anti-microbial. No more sealing grout! :)
