This commercial design challenge was to create an iconic Nantucket outdoor environment for the new CōV restaurant at Minnesota’s most upscale shopping mall and opposite the country’s oldest mall.
The key was to create an atmosphere that would transport people to a different place while making them feel like guests on a special porch or patio rather than at a commercial business. The patio deck showcases a distinctive 12-in.-dia. Kentucky coffeetree the NARI member plucked off a homeowner’s front lawn and made to look like it had grown around the classic white pergola over time.
Multiple seating options for eating meals and lounging with cocktails.
Slow growing Kentucky coffeetree will not will not drop large seedpods and berries or exceed its space.
Slow leaf-out lets patrons enjoy pleasant sun in cool spring months and shade in hot summer.

By design, the gnarly 15-year-old Kentucky coffee tree’s ‘legacy’ look suggests it came before the deck.
The designer chose Kentucky coffeetree, Aspen and Kindred Spirit Oak trees for staggered foliage and a variety of evergreen and seasonal plantings for year-round visual appeal. The client specified the red flowers for a patriotic, New England look.
