This 35 year old custom kitchen was done by her father's cabinet shop that was one of my first employers back in 1975. I was able to restore close to the original color by steam cleaning, which removed all the damaged finish, then bleaching the raw wood. Then I created an overstain that seamlessly blended all the values together. She happily says they look just like the day they were installed.
