Appreciate the rethinking vs “seasonal annuals”. Composting and mulch are increasingly important for many facing longer, hotter, dryer seasons for any chance of success in future gardens.

Another fall chore, depending on where you live, is to plant lettuce seeds in pots in the cold frame so you can harvest baby greens every week all winter. I do that mid-September. Here also, this is the best time of year to overseed the lawn if you will be using a mulching mower and a leaf blower later, vs raking the tree leaves for your mulch pile.
Nina, I hear you, both on the cover-crop seeds that can remain dormant and be future weeds for years, and the use of hay. I assume you know the difference between hay and straw, but others may not. My worst weed is the oat, wheat, or rye that comes from the straw I use as mulch. If only I could get the straw harvested before it went to seed. Had I access to hay, maybe I wouldn't have weed seeds. You tell me... What hay do you have access to, and does it give you it's seeds as weeds?
