From the picture, it appears (4) recessed lights should be about right in the Kitchen-Proper. (3) at counter edge and (1) pulled out for refrigerator. It appears you already have a fluorescent light over the sink, but that can be changed to a can (no pendant with a soffit) if you want. There should be an additional recessed light in front of the Pantry. Unfortunately, the beam and Pantry both will block good counter light at the section under the open shelves. Under cabinet accent lighting is also an option in addition to the recessed ceiling lights.

If you have a seating area up against the wall, I would suggest moving the central ceiling box over to align with the table, and that can be a chandelier/pendant/semi-flush to your liking.

Since you are doing electrical, for the white corner display cabinet you may want to either install in-cab lights or put a gimbal light in the ceiling to shine on the cabinet shelves.
