I’m considering using existing black granite countertops on perimeter cabinets and changing island countertop to quartz w/subtle black veining along with black lower cabinet island. Kitchen is a square with island in the center. It’s 2021 - is this look outdated?

I think something in a medium tone would look best. Very light will be too much contrast and might look stark. You already have a lot of dark materials in the kitchen, so I would not choose a dark color. What color is the flooring? You might be able to use that color two shades lighter for the backsplash. The room as you describe it is all in tans and browns. Would you like to add some color to the kitchen? You could choose to paint the backsplash area with semigloss paint(s) to try out colors for a while before you commit to tile or some other more expensive option. If you do not have under cabinet lighting, consider "warm" LED strip lighting that is dimmable.

If wiping down the black appliances isn't enough to drive you crazy than you could certainly compound your cleaning time and do dark countertops as well .. they will show every crumb, fingerprint or drop of water. But when they shine they will be gorgeous -- it's just keeping them like that! Lighter countertops are far more forgiving.

i love that color and was leaning toward something like this but having friends tell me it's to light with my dark cabinets dark green counter top and dark floor but i have samples on the wall and really like it
