You don't have to spend $60-100,000 to do a great kitchen. You have to think through what matters most. I went with stock solid maple stained and glazed cabinets -- all soft close hardware and roll-out trays. Some cabinets I made deeper and some more shallow (there were other options available, too). Instead of custom cabinets quoted at $42,000, I spent $11,700 (saving just over $30,000). I used 2 single silgranite sinks side by side to make a very large double sink. You can figure out ways to achieve what you want but for less money. It just takes effort. If you don't have budget, then you must have time and effort.

Don't let the KD be the boss of you! A KD can be a great resource and ours had several ideas I would never have thought of, but also talked us out of a couple things I wish I had put my foot down on and insisted on!
