Vertical Shiplap Alternative?

Looking to inject some subtle country charm into my farmhouse kitchen with low ceilings. Thought I could kill two birds with one stone by installing some vertical shiplap on the walls. We just came from the lumber yard and we were discouraged by finding out how much more difficult and time-consuming it would be to DIY install shiplap vertically over existing (sheetrock) walls, due to its thickness/weight. I love the look of it, though, and visually similar paneling as seen below. I know there's beadboard sheets that are easy to install, but it's just a little too country-looking, if you know what I mean...especially the thinner varieties, which is all I seem to find. Looking for other alternatives that would be on the easier side of the spectrum to install. Price is a consideration, but we're willing to spend a little more $ if it rocks our socks off and looks awesome.
