onion storage

So, for many years, after harvesting my 1015s, I set them aside for a few weeks for the stems to dry, and then trim those dried stems to a 4-6 inch length, and string them up. But I'm wondering to what extent this stem drying is necessary for long-term storage. If I just cut the green stems off and pile the onions up, will they last as long? For example, store-bought onions already have the stem removed, and they last a long time. But did they dry the stem before doing that?
