Traditionally I would say oak cabinets but go for maple if you want to create a unique look. It's something a bit different.

Maple is more unique than oak. There's two different ways to install a ceiling, drywall with taped seams or blue board with veneer plaster. Depending on your location, one is usually favored over the other. The veneer plaster is much nicer and will provide the best level of flat appearance. A "textured" plaster finish is a bit cheaper but is typically only used for closets and places which will receive heavy use. The cabinet or closet question is a personal choice, what will the closet be storing? If it's a/v equipment you could store this in the cabinet as well. Visually, I'd favor two cabinets, but it will be extra cost.

For paint grade cabinets go with hard maple if budget allows, because that is the most expensive wood used for paint grade cabinets.
Some manufacturers use poplar which is the cheapest, followed by soft maple, birch, etc. to keep the cost down.
What ever you do don't paint oak, because oak has open grain and when oak is painted it doesn't look good. Many painters will use drywall compound or Bondo filler (which is better) and go over the surface to seal the grain, then sand smooth and apply the paint but that's a pain in the A$$ process especially if you doing it yourself.

As textured or popcorn ceilings go, many customers ask to remove and make it smooth, especially if they have build up cabinets and crown or other trim will be placed against it. Also if something happens and you have to make some type of repair, especially a larger area, its very hard to match existing.
