can any one recommend a brand of recessed lights. and, I have roughly about 300 sq ft of area that I will install recessed lights - any guess on how many lights I should install?

"Juno" brand. I like 4" and 6" . I personally prefer 4" over the 6".

For instance, my family room is rectangular and approximately 380 square feet. I have 8 6" recessed cans . 2 rows of 4 lights that are evenly spaced

Better to go with too many than not enough, you can put them on a dimmer. If you are using the new LED bulbs make sure you get dimmable LED bulbs and an LED dimmer switch, there is a difference.
