Concrete Countertop Install Issue

I love my concrete contractor (he's done the basement floors) but have some questions regarding the install of the bar counter. He said the walls were out of square so they had to break thru the drywall to install and that left a mess, plus a gap on the far side. The general contractor (who I've had nothing but trouble with and they did not contract with the concrete guy, I did) said the walls are fine and that the concrete guy also put a seam in the wrong place, as it's supposed to be over a cabinet for support. My idea is to have the concrete guy fabricate a small backsplash and side splash to cover the gaps, although not sure how to fix the drywall mess. The overhang is also at the bare minimum and has some variability but it does cover just barely the cabinet doors (which also are being reworked because they don't all match). Thoughts?
