From juicy Thanksgiving turkey to roast potatoes and lasagna, a quality roasting pan will keep you in business year round. Typically roasters are considered specialty items used only for holiday meals, but they can be a great addition to your cookware for dozens of other meals as well.

What size roasting rack should I buy?


Bigger is not always better. You want a roasting tin that will accommodate the largest item you plan to roast without touching the sides. A pan that is too big could cause your juices, sauces and gravies to burn. Don’t forget to measure the inside of your oven before making your purchase — some ovens can be surprisingly small on the inside. Make sure the height of your pan’s sides is high enough to keep hot liquid from sloshing out but low enough to allow proper air circulation.

What material should my roaster be made of?


Stainless steel or copper are the materials of choice for your turkey roaster — they’re hefty enough to not warp when heated. Anodized aluminum is another good choice, however the dark color of the interior may prevent you from checking your roast’s juices. Nonstick is less preferred, not only because of its dark color but also because it won’t allow your juices to adhere to the pan’s surface and build deeper, more robust flavors.

What other features should I consider for my roasting pan?


If you’re mostly roasting heavy poultry, meat or large portions, look for thick, fixed handles on your roaster. The addition of a rack will keep the underside of your poultry from getting droopy, allow hot air to circulate under your meal, and add room for drippings to move freely. Some models even offer a piece with handles that sit flat in the bottom of the pan to make it easier for you to remove your roast when it’s done cooking.
