to the question about ventilation of pizza ovens, - yes they do require property ventilation . google may help you in finding some specifications.

You don't really need an exhaust fan for an outdoor oven. What you want is a flu to draw the smoke up. Specific requirements depend on if it is a stand alone oven, attached to your house, or under a patio roof. Also it depends on whether the oven is wood-fire only or a gas oven.
