I'd tile just the back wall of the coffee bar. if you want some sort of accent/feature

as far as the other counter area, I think just a 3"-4" piece of matching counter top would be appropriate.

For me, future thought on tiling the wall would have been a consideration prior to deciding on shelving, window framing, etc. you are sort of left without any definite tile design/layout options. just my opinion. I like the cabinet choice.

What about a low backsplash just the height of the window and pass through pony wall thing? Like 3 rows of tiles.

What is the deal with the wood trim visible on the pass through, will it be removed? I would not tile around that i.e. where your tile samples are sitting. If that's fixed, I would not tile that wall at all. sink wall and coffee wall only is logical as those are the wet areas.

Love the kitchen. Keep it simple. As Lyn suggested, 3-4” low backsplash in countertop material.
