how do you keep end-grain from absorbing water from undermount sink?

I currently have such a counter-top, unsealed, on which I work directly. I would love to have an undermount sink in a similar countertop elsewhere in the kitchen, but fear that water will destroy it. I do apply mineral oil regularly, but can't imagine this sealer would stand up to sink usage. Thank you.

    Mineral oil never fully hardens, but rather only conditions the wood. There are plenty of food safe oils that will harden and provide sufficient protection, such as pure tung oil or pure walnut oil. You would also be safe to use a polyurethane if you wanted, as most finishes are pretty well food safe after 30 days of curing.
